I enjoy spending my weekends.

enjoy 是 transitive verb 及物动词, 因此 spending 称为 V-ing 动名词, 理由是 spending 称为

Object of a transitive verb 及物动词之宾语。

这就是要看清楚及物与非及物动词的去向, 而决定动名词或现在分词之所在。

试举一例:

The bird flew screaming in the tree.

flew   是不及物动词, 因此 screaming 是现在分词 Present Participle 也。不能称之为 V-ing。

你问 I enjoy to do  能不能 ?

I enjoy to read 或 I enjoy reading, 两者的文法是对否 ?  都是无可厚非也。
